White juices, grapes.

Reds

AURORE: produces a white wine of distinct varietal character, often used as a blending component, popular blend for Delaware, and most other varieties.  

CATAWBA: produces a very drinkable, fruity, spicy wine when made nearly dry. Very compatible blended with lower acid Niagara. Finish sweet or dry.  Catawba tends to have a high acid which can be reduced with water as it has so much varietal character.  When pressed on the skins of Red Hybrids or splashed with various reds, it can make a very good fruity semi-sweet to sweet wine the pink color makes it very attractive in the glass.

CAYUGA: fruity, easy to work with, wine of exceptional character.  Reminiscing a Riesling, this hybrid warrants serious consideration.

CHARDONNAY: rich, yet delicate, complex, clean. Produces exquisite wine. Generally finished dry, with or without oak.

DELAWARE: A fine, balance, consistent producer when ripe grapes are used.

DIAMOND: One of the older varieties.  Clean, fruity, delicious wine, best with a sweet finish.  A very popular wine.  The fresh juice is reminiscent of pineapple.

EYE OF THE PA'TRIDGE:  Tom's new blend of lightly pressed Merlot and Chardonnay.  A wonderful  royal pairing.  A surprisingly complex and serious rose. 

GEWÜRZTRAMINER: spicy, fruity, elegant. Produces exceptional wines. Serve with spicy foods, interesting pairing with Chinese foods or German brats!  Best finished sweet.

Maiden's Blush, not a red and not a white!  Tom has been using the Baron's for color, blended with Cayuga, Seyval and Aurore – a hot seller.  Most winemakers finish this one sweet and fruity using Cotes des Blanc as a yeast. 

MUSCAT OTTONEL: very delicate, pleasantly fruity, elegantly perfumed nose. Excellent as a varietal or blended with Riesling or Gewürztraminer, sweet or dry finish.  Not a long living wine.  To be enjoyed young!

NIAGARA: fruity, big nose but thin body – improved by blending with Catawba, Aurore, Diamond and Delaware.

RAYON D’OR: Nice aroma, reminiscent of raspberries when fruit is retained by proper yeast and a slightly sweet finish.  Discontinued.  

RIESLING: a feather in our cap, fruity, scrumptious, rivaling fine German wines.  We blend 5 different clones.

SEYVAL: (SV-5276) - For thirty years Seyval has been one of our best selling white varieties.  The variety has good body, nice character and is just easy to make and easy to drink.  One of my favorite wines is a blend of 75% Seyval, 25% Chardonnay - finished dry and lightly kissed with oak.  This blend will please most and it compliments almost any food you can imagine.  It is. very popular, easy to work with, sweet or dry finish, plain or oak-ed, very versatile.          

TRAMINETTE  is a cross of JS 23-416 X Gewurztraminer (65.0533.13).   The recommended yeast is Lalvin 71B-1122 with a slight residual sugar.  This delicate grape can yield a very aromatic, fruity wine.  We would imagine that it is not a long living wine and would be best drunk young.

VIDAL 256: is a good one for the beginner, easy to work with, almost makes itself, sharp, clean taste, dry or sweet, a Riesling like fruitiness if Cotes des Blanc or Lalvin 71B-1112 is used.  It took a while for Vidal to catch-on because it matures so late in the season, but it has a strong following – extremely easy to make - nice wine finished dry, semi or sweet.  Depending where it’s grown it can have lovely citrus character orange blossom, orange, lemon and lime. A great fresh drink.  Great blender – its crispness and fruit can really bring other wines alive.

VIGNOLES (RAVAT 51): one of our favorites, clean, big full bodied. Its Pinot Noir parentage comes through.
Should be cold stabilized as it tends to  have a high acid.  Our choice for a Late Harvest.  

LATE HARVEST VIGNOLES:  When the growing season is hot and dry, the vineyardist is more at liberty (less at risk) to manage the vines and the fruit for the possible production of a true late harvest. A few late rains in September and early October will be all that is needed to encourage the "Noble Rot" Botrytis Cinerea to form. This unique fungus dehydrates the berries causing actual raisins to form on the cluster. This dehydration concentrates the sugars, aromas and flavors of the grape. Delicious hints of apricot, peach, raisins and honey permeate the juice and the wine to be.

PINOT NOIR CUVÉE: A special light pressing of whole berry Pinot, picked early for your champagne.  
This free run presses out light in color.  Not for red wine!

BLENDS: All blends are adjusted (sugar and acid) to take the worries out of winemaking and are ready to go!

VINIFERA BLEND: 
EYE OF THE PA’TRIDGE: 
Tom's new blend of lightly cold pressed Merlot with big fruit married with an elegant, soft, ripe, luscious Chardonnay.  A wonderful  royal pairing, ferment dry with or without oak.  A surprisingly complex and serious rosé, crisp and scrumptious.  Beautiful!  Succulent with seafood, roasted poultry, wild game and pork.  

PREMIUM HYBRID BLENDS:
Maiden's Blush, a rosé Tom has been using the Baron's for color, blended with Cayuga, Seyval and Aurore – a hot seller.  Most winemakers finish this one sweet using Cotes des Blanc as a yeast. 

White Queen's Blend:  Contessa Bella:  The White Blend has evolved into a delicious, full bodies white blend with the addition of Vignoles and Vidal to the Seyval, Aurore base. Tom has jiggled this blend around for the last 2-3 years and it is gaining in popularity.  In 2007 one of our favorite winemakers took a gold in the NYS Fair Competition!
