	Happy Spring to all! It seems to have been a long winter in NY. We have discontinued an acid reducing product called Acidex Super K. Our supplier is not going to be back in stock until April 1st, which was too late for natural cold stabilization. That product was (according to label) 99% Potassium Bicarbonate and 1% Potassium Bitatrate, so we had to scramble to find potassium bitartrate in bulk to provide a "do your own seeding" for one of our commercial winery customers. Seeding is the addition of potassium bitartrate to a wine at cold stabilizing time at the rate of 4 grams per gallon. An amateur wine maker would stir the wine every day for two weeks allowing it to settle while still cold and then rack. Super seeding uses a greater rate and continuous agitation for several hours during the cold stabilization process. Potassium Bitartrate is now available in 20 gram packs for 5 gallons and 80 gram packs. If you have a refrigerator rigged for cold stabilizing, you may want to consider using it.
