2009 cold climate vintage from NY
Wine makers should cold stabilize....

10% off pH meters in supply

Wine makers are strongly encouraged to use multiple means of lowering the Total Acid (TA) found with the 2009 Vintage from NY vineyards.  Sugars are easy to adjust with the addition of corn or cane sugars, but the TA needs closer attention. 

When the juices were fresh before fermentation, we recommended the use of Calcium Carbonate and even sugar adjusted non-chlorinated water. 

After fermentation we switche the recommendation to Potassium Bicarbonate.  If one uses potassium bicarbonate, one MUST cold stabilize to finalize the acid reduction action.

NOTE:  Potassium Bicarbonate reduces TARTARIC ACID!

With acid adjustments using calcium carbonate and/or potassium bicarbonate, please be aware of pH shifts (increase) that result from their use.  Due to the pH shift, the maximum acid reduction you may achieve will be around 0.25 to 0.3.  Not enough for most wines for this vintage.  If the initial pH is below 3.0 the wine maker has less worry regarding the pH shift.  If you have a pH of 3.20 or above, exercise caution and reduce the  amount use (of the acid reduction agent) and CHECK your pH.

With a challenging year ahead for the amateur wine makers, we are offering a 10% savings on our Milwaukee 51 portable pH meters.  Usually $79.99 use that 10% to pay our reasonable shipping-postage charges (USA) or the sales tax. 
Sale is for stock items only.  Qualities are limited.  These meters come with 20 ml sachets of pH 7.01 and pH 4.01 solution necessary for calibration. 

We have also encouraged the use of Malolactic fermentation as an aid to reduce the acid and soften the wine.  We carry 2 direct add cultures: Chris Hansen Lab for 60-66 gallons and Lalvin Bacchus for 6 gallons.   Do not use citric acid or Lalvin EC-1118 yeast if you are planning a  malolactic fermentation.
