SPRING IS HERE!!

We thought it was, but had a surprise ice storm (a couple of them) and then snow with gloomy, gray skies and even though geese were flying overhead, it was not encouraging. The next snow had a sunny blue sky! Just the picture I wanted for our winter scene on our new website at www.101winemaking.com This site has the answers to some of your questions if it is late at night and we aren't answering the phone to help you out with winemaking issues. This is a great collection of FREE (online) information on winemaking procedures, problems, instruction for filters and additives, and more! Check it out.

Last cold spell for winemakers!

SO NOW THAT IT IS SPRING.....Take advantage of our last (hopefully) cold spell to cold stabilize if you haven't done so already. If you have a negative reading on your hydrometer of minus 1.5 to minus 2 or so you probably have a dry wine. Tom says it depends on your initial brix, so it is more complicated than meets the eye. If you have a negative reading and want to test for residual sugar, use our clinitest kit for a more accurate measurement. Then you can use sorbate, if it is indicated. If you add sorbate (and meta), it is ideal to cold stabilize, so check this issue out before you cold stabilize, then you will be truly ready to bottle.

If you used any acid reducing agents other than calcium carbonate, you must cold stabilize to finalize the acid reduction task of the agents used. One of our winemakers gently told us that the tartrate crystals that settle out from cold stabilizing can go back into solution and so, we should cold rack. It seemed that Tom was always carrying in our wine at 10:00 at night so the jug wouldn't break in the colder night time temps. We convinced ourselves that we could wait on the racking. Now we have better places to cold stabilize with better control. I stand corrected. Cold rack unless you are willing to compromise a bit.
