FINING AGENTS
Bentonite granular    8 oz  Negative charge.
Use 3 to 5 grams per gallon, if added during the fermentation. If added immediately following the completion of a primary fermentation, use 1-2 grams per gallon. Wines with a higher pH will require more bentonite. Mix Bentonite with 5 ounces of water, let stand overnight or at least for 2 hours. Mix some wine back into the slurry and add to the wine. Fluffy lees, may rack in 24 hours.

Our amateur winemakers have also used it with wines.

Reduless is a yeast derivative for minor hydrogen sulfide problems.  Rate of use is rounded to 2-3 grams per 5 gallons, may re-treat. 

If this fails, may re-treat and then we have to resort to using Copper Sulfate.

French OakPLUS chips, a smaller  chip medium toast 4 oz:  

Innerstave French Medium Toast provides complex, pleasantly mild and delicate toasted oak characters and aromas of vanilla, caramel, chocolate, hazelnut, oatmeal with honey, graham cracker, with a touch of cinnamon and nutmeg. The flavors provide sweetness, creaminess and roundness to the mouth feel with a lingering non-aggressive toast character.

French OakPlus Chips take 8 weeks for full extraction but 5-6 weeks should be sufficient.  Due to the length of time required for extraction, add these chips after the primary extraction. If you want to use them in the primary fermentation, put them in a grain or hop bag for retrieval.

Dosage of the new winestixs is one stick per carboy 5-6 gallons and minimum contact is 2-1/2 - 3 months, best when given 8-10 months, just like a barrel.

Due to feedback from winemakers, Winestix have been resized for carboy use for maximum contact and flavor extraction.  Now you will not over-oak nor have to remove your sticks 1/2 way through the recommended contact time for complete extraction of flavors. 

The recommendation to cut them in half for a carboy is no longer necessary, as the new sticks have been resized and are a little over 1/2 the length of the older longer sticks.  You will not need to freeze your sticks to re-use for another batch.  Concerns have been expressed due to that practice.  

It is recommended that you put your sticks in during the primary fermentation (red must or white juice).  When you rack and press, scrub the sticks off (stainless wire brush) and put them back in for the secondary fermentation.   Dosage is one stick per carboy 5-6 gallons and minimum contact is 2-1/2 - 3 months, best when given 8-10 months, just like a barrel.
