Don't hesitate to contact us. Varieties will need initial reduction with calcium carbonate, and after fermentation reduction with Potassium Bicarbonate, plus cold stabilization. I will try
to find some Acidex, but have none now. Water is an option for some varieties.

Late Harvest Vignoles need to increase acid |
Not available this year, 2003. The weather just does not appear to be improving with sunny ripening conditions. There is not any photosynthesis under 70 degrees F plus the fruit will deteriorate. If he held Vignoles to a late harvest, we would be lucky to see a low brix in the low 20's range. You could make a fake late harvest by freeze concentrating or adding sugar to 30 brix. The acid on the regular Vignoles will support a sweet style. See: Late Harvest Wine. Sorry, it just doesn't happen every year. |

Baron’s Blend is a blend of Chancellor, Baco, Foch, and Leon Millot. A dark hearty bodied Bordeaux style.
Prince’s Blend is a blend of Foch, Leon Millot, and maybe Chancellor. A medium bodied, complex Burgundy style.
Maiden's Blush is a fruity wine best finished with a little residual sugar. It is a blend of Aurore, Cayuga, usually Chelois, however, due to that shortage, Tom used another red to color. While it looks dark in your container, it should lighten with fermentation. We usually recommend a 71B or Cotes des Blanc for this wine.
White Blend is a combination of Seyval, Vignoles and Aurore. All blends are sugar and acid adjusted.
The percentages vary, the order the varieties are listed in not necessary in order of volume of those juices used. Colobel and Chelois are usually used in the blends, but due to late ripening (Colobel) and shortage (Chelois), neither of them are in the blends 2003.
