October 1, 2002  Hello!  In spite of the drought, we are having a bumper crop this year.  (Last years' crop was shy.)  Tom has been so busy pressing and pumping, he hasn't had time to run official test.  I drank most of the samples I drew last weekend, when I saw that the test weren't going to happen.  All the samples were absolutely delicious!  I would say that acids are moderate to low and the sugars are moderate to excellent.  The Foch is a 22;  Seyval is 21.5;  Luci tested the Diamond at 19 and  with a low acid, in that it tasted really sweet.  (See what I mean?)   This is not how we usually run test.  Don't conclude that no numbers mean no juice.  We have lots!  NUMBERS NOW OFFICIAL!  Tom ran test 10/5/2002 for the below items and will do the Pinot Blanc later today.  Tom uses his pH meter to determine the end point.  

One winemaker called us with an acid of .735 on his Merlot with a 19.5 Brix.  I will try to fill in numbers as I get them.  We do not run official numbers on Vinifera grapes as they leave with the customer and we have nothing to run test on.  So call us with your Pinot Noir and Gamay numbers and I'll post them.  Thanks for your patience!!  Marcy
